Khoey Khua



Khoey Khua is one of a famous Southern-style Nam Prik. as a dip and has Khoey as an essential ingredient. Khoey is shrimp paste that is made from “Khoey”, which is a variety of very small shrimp. The shrimp paste has a beautiful purple colour with spots that are the shrimp eyes. It is aromatic has a salty or sweet taste.
To make Khoey Khua, start by boiling coconut milk, adding the Khoey and nam Prik ingredients, and stirring until thick. Sugar is then added for sweetness. The saltiness is derived from the shrimps. Kaffir lime leaves are added for the aroma.
The whole is eaten with various vegetables.Khoey Khua is one of a famous Southern-style nam Prik. It is usually made at home and eaten on a regular basis, especially in Chumphorn, Pattani and Songkhla provinces
