Seua Rawng Hai (Crying Tiger)
Seua Rawng Hai (เสือร้องไห้ – Crying Tiger)

Servings: 4 to 6
Seua means tiger and rawng hai means crying. As one story goes, this salad was once made with such tough meat that even tigers cried while trying to eat it. Another tale says that it should be made so hot (with chiles) that tigers cry while trying to eat it.
1 pound top round steak
2 tablespoons light soy sauce
1 teaspoon fish sauce, plus 1/3 cup fish sauce
1/3 cup water
1/3 cup lime juice
1 shallot, thinly sliced
1 tablespoon kao kua, roasted rice powder
2 teaspoons ground chiles, or to taste
Marinade the beef with the soy sauce and 1 teaspoon fish sauce for about an hour.
Meanwhile, combine the remaining fish sauce, the water, lime juice, shallot, rice powder and ground chiles and set aside in a serving bowl.
Grill the meat over hot coals until done as desired. Slice the meat thinly and arrange the slices on a serving platter. Coat the meat with the dipping sauce.
