Om Gai
Om Gai is the most popular dish among the type of cooking that is called om. Om means a small amoount of soup cooked with meat and vegetables. Other ingredients added for flavoring include dill, fresh hot chillies, lemon grass,
kaffir lime leaves, garlic and shallots. Om is a dish that uses various kinds of vegetables in season, with meat making up only 1 part in 10. The flavor tends to be sweet due to the use of various vegetables, hot due to the chillies and aromatic due to various spices and dill.
Other meats that can be used include cow’s placenta, beef, catfish,tadpole (called om huag), apple snail, frog, bird and eel.
